Lemon zest gives a unique fragrance and flavor to many sweet or
savory dishes.
It is important, however, to use untreated lemons, but we don’t always have them at home when we
need them.
When you find organic lemons, I recommend buying three or four, washing them, and removing the zest using a grater.
Make sure you remove the
bright yellow zest and none of the white pith, which is bitter. Freeze in small containers.
After that, squeeze the
lemon juice and
freeze in the container for ice cubes. In this way you
will always have both, zest and juice handy.
Believe me: it's worth it!
