Last year I wrote about home made herb salt, which can
give your food a special note and also reduce your salt intake.
The same applies to oil. We should use only high
quality oil in the right amount. If you make your own flavored oil, your food
will have that "special something"
Chili oil is great, especially if you don't know if
your guests appreciate spicy food. In this case, just leave out the chili when you
cook, and put the chili oil on the table, so that everyone can spice up their
food according to their taste. Another good aspect is, if you have chili oil at
home, you don't necessarily need to buy chili for your recipes. This is
especially handy if you don't use it regularly.
I use only extra virgin olive oil.
